雪山飛狐其實就是鹽山烤魚啦。很多年前不記得那間店家為這菜取名叫雪山飛狐,英文名叫Snow Mountain Flying Fox, 單讀菜名就另人會心一笑。 做法簡單,在魚身上塗一層鹽醬,送進氣炸鍋,不須看火,30分鐘後魚就烤好了。再來做個自調泰式沾魚醬,簡易又好吃的一道年菜就完成了。
分量:4-5人份 準備時間:15分鐘 煮時:30分鐘(烤時)
材料A: 1條(600克)金鳳魚 2支 香茅(拍扁)
材料B(鹽漿): 600克 鹽 5湯匙 蛋白
材料C(沾魚醬): 3瓣 蒜頭 1棵 蔥 2條 小辣椒 1棵 芫荽 8粒 桔子(取汁) 2粒 酸柑(取汁) 1湯匙 魚露 2茶匙 糖
準備功夫: 1. 金鳳魚留鱗去內臟洗凈抹乾待用 2. 把材料B和C各自拌勻待用
做法: 1.在魚腩內部搽少許鹽,放入香茅 2.把魚放在烘烤紙上,把鹽漿塗滿在魚身上,放入氣炸鍋以200°C烤30分鐘 3.烤魚出鍋,去掉鹽巴層 4.淋上沾醬,趁熱享用

Ingredients A: 1 pc (600g) tilapia 2 pc lemongrass (smashed)
Ingredients B (salt mixture): 600 g salt 5 tbsp egg white
Ingredients C (dipping sauce): 3 cloves of garlic 1 pc spring onion 2 pc cili padi 1 pc coriander 8 pc calamansi (juice) 2 pc lime (juice) 1 tbsp fish sauce 2 tsp sugar
Preparations: 1. Gut the fish but remain its scale, clean and set aside 2. Mix Ingredients B and C separately
Steps: 1. Apply some salt inside the fish belly, insert lemongrass 2. Place the fish on a baking paper, cover the whole fish with salt mixture, bake in the air fryer at 200°c for 30 minutes 3. Retrieve fish, remove the salt crust 4. Dress with sauce, it’s done!
